Vegetarian Chili
2 tbsp vegetable oil
1 large onion, chopped
1 small green pepper, chopped
2 cloves garlic, minced
1 tbsp chili powder
1/2 tsp cumin
2-1/2 c. V-8 vegetable juice
2 cans kidney beans, drained
In large saucepan over medium heat, heat oil. Add onions, green
pepper, garlic, chili powder and cumin and cook until onion is tender.
Add vegetable juice, heat to a boil. Reduce heat to low. Cook 5
minutes. Add beans and heat through. Serves 4.
