HOT CROSS MUFFINS   

      1 2/3 c. flour
      2/3 c. sugar
      2 tsp. baking powder
      3/4 tsp. cinnamon
      1/2 tsp. salt
      1 egg
      1/3 c. salad oil
      2/3 c. undiluted evaporated milk
      3/4 c. raisins
      1/4 c. powdered sugar
      1 1/2 tsp. undiluted evaporated milk

      Sift flour, sugar, baking powder, cinnamon and salt into medium bowl. 
Make well in center of flour mixture. Beat together egg, oil and 2/3 cup 
evaporated milk. Pour into well. Stir with wooden spoon just until flour is 
moistened. Stir in raisins. 
      Spoon into buttered muffin tins, filling cups 2/3 full. Bake in hot 400 
degree oven for about 20 minutes. Remove from tins and cool 5 minutes. Combine 
powdered sugar and the remaining evaporated milk. Drizzle over tops of muffins 
to form a cross.  Enjoy.
