APPLE CINNAMON MUFFINS   

      2 1/4 c. oat bran cereal
      1/4 c. brown sugar
      1 1/4 tsp. cinnamon
      1 tbsp. baking powder
      1/4 c. chopped walnuts
      1/2 c. skim milk or evaporated skim milk
      1/4 c. raisins
      3/4 c. frozen apple juice concentrate
      2 egg whites
      2 tbsp. vegetable oil
      1 med. apple, cored and chopped

      Mix all dry ingredients in a large bowl. Mix milk, apple juice 
concentrate, egg whites and oil in a bowl or blender. Add to dry ingredients 
and mix. Add chopped apple. Line muffin pans with paper baking cups and fill 
with batter. Bake in 425 degree oven for 17 minutes. Makes 12 muffins. 
      After cooling, store in a large plastic bag to retain moisture and 
softness. 

      NOTE: We have a good friend who "guarantees" one of these each day will 
drive anyone's cholesterol down to 175. I can only attest to their tasting very
