BLACKENED FISH FILLETS

2 tsp paprika
1/2 tsp each dried oregano,  crumbled, and onion powder
1/4 tsp each cayenne pepper, salt and ground black  pepper
4 catfish or tilapia fillets (this recipe works well with any kind of  fish)
2 tbs vegetable oil

Blend first 6 ingredients in a bowl. Pat  fish fillets dry with paper towels, 
then rub spice mixture into both sides of  fish. 
Heat oil in a skillet. Add fillets and cook 4 min. flip over and  continue to 
cook another 3 to 4 min. or until cooked through and fish flakes  easily. 
Serve immediately. MAKES 4 SERVINGS.*
