Addictive chicken salad sandwiches

Ingredients

I usually make this up and have it ready on hand for weekday

lunches, so serving sizes may vary.

~1 pound of boneless/skinless chicken breast (dice and cook)

~1 stalk celery (chopped)

~1/2 red bell pepper (chopped)

~1/2 green bell pepper (chopped)

~1/2 small onion (chopped)

~1 tomato

~Lettuce to taste

~cibatta or your choice of bread

~hard boiled eggs (1 per sandwich)

~Mayonnaise

~salt/pepper to taste

~Pinch of Italian seasoning (optional)

 

Directions

Cook chicken with Italian seasoning. After chicken cools, mash

until close to texture of tuna. Mix chicken together with fresh

veggies, salt/pepper, and enough mayo to coat mixture.

Slice hard boiled egg & tomato. Put mixture on your bread of

choice, (I prefer whole grain for the added nutrients) layer

with egg slices, tomato slices and lettuce and you're done.
