SWEET POTATO COBBLER ROLL 

1 stick butter
2 c. granulated sugar
2 c. water
1 1/2 c. sifted self-rising flour
1/2 c. shortening
1/2 c. milk
2 c. baked sweet potatoes, sliced
1 tsp. grated orange rind

Heat oven to 350 degrees. Melt butter in 9x13x2 inch baking dish. In saucepan, 
heat sugar and water until sugar melts. Cut shortening into flour until mixture
resembles coarse meal. Add milk and make into dough. Knead on floured surface 
until smooth, then roll into large rectangle about 1/4 inch thick. 

Sprinkle orange rind over sweet potatoes; then spread sweet potatoes evenly 
over the dough. Roll up like jelly roll, sealing edge with water. Slice dough
into approximately 16 slices and place in baking dish with melted butter. Pour 
sugar mixture around slices and bake for 55 to 60 minutes. 10 servings.
