PEACH PERFECT SHORTCAKE   

      Melt 4 tablespoons shortening in 1 1/2 quart ovenproof casserole. In 
separate bowl mix:

      1/2 c. flour
      1/2 c. sugar
      2 tsp. baking powder
      1/2 c. milk
      1/2 tsp. almond extract
      2 c. peaches, peeled & diced
      1/4 c. sugar
      1 tsp. lemon juice

      Turn on oven to melt shortening. Pour above batter into melted 
shortening. Do Not Stir! Toss sugar and lemon juice with peaches until well 
coated. Pour fruit into batter, Do Not Stir. Bake at 450 degrees for 10 
minutes, reduce heat to 350 degrees and bake 30-40 minutes depending on size of 
casserole. Serve warm with cream. Serves 4-5.
