PEACH SHORTCAKE PIE   

      1 c. biscuit mix
      1 tbsp. sugar
      2 tbsp. melted butter
      1/4 c. milk
      1 pkg. vanilla pudding mix
      1/4 tsp. almond extract
      Whipped cream
      1 can sliced peaches, drained

      Combine biscuit mix, sugar, butter and milk. Press with floured finger 
tips into a well greased 9 inch pie pan. DO NOT ROLL DOUGH. Bake at 425 degrees 
for 10 to 15 minutes. Prepare pudding as directed on the box, except use only 1 
1/2 cups of milk instead of two. Add almond extract; cool. Pour into crust. Top 
with whipped cream, sweetened if desired, and well drained peaches.
