Lime Chicken Fajitas
1 lb. boneless chicken breasts, sliced fairly long and thin 1/4 - 1/2
cup lime juice salt and pepper
2 tbsp. olive oil
1 yellow bell pepper, sliced
1 red bell pepper, sliced
1 onion, sliced
1 head romaine or iceberg lettuce, chopped flour tortillas
sour cream
lime wedges (for garnish and use)
Combine the lime juice and salt & pepper; marinate the chicken for at
least 30 minutes. Heat the olive oil in a large pan.
Add chicken to the pan, and cook through, about 7 minutes. Remove
chicken, and add peppers and onions to the pan. Cook until soft, about 5
minutes.
Warm the tortillas up. Quickly warm them in a nonstick skillet or you
can place them in some foil and warm up in a 250 degree oven.
Keep warm by wrapping in foil until ready to serve. Wrap chicken,
onions, pepper and lettuce in tortillas, serve with optional sour cream
and lime wedges.
