PEPPERMINT FANCIES INGREDIENTS 1 Egg White, large Peppermint Flavouring Green Food Colouring 275g (10oz) Icing Sugar RECIPE INFORMATION Serves 20-22 HOW TO PREPARE 1. Place the egg white and a few drops of peppermint essence and green food colouring in a medium bowl and beat well using a wooden spoon. 2. Add the icing sugar and stir well until the mixture begins to come together. Use your hand to bring the mixture together to form a soft dough. 3. Roll teaspoonfuls into balls and place on greaseproof paper. Dip the prongs of a fork in icing sugar and use to flatten the peppermint creams. Leave to harden.
