Sweet Potato Casserole 3 c cooked sweet potatoes, mashed 1 tsp vanilla 2 eggs 1/2 c melted butter 1 c sugar Topping: 1 c brown sugar 1/3 c melted butter 1 c chopped pecans or pecan pieces 1/3 c self-rising flour Mix all of the above ingredients together and pour into a cassrole dish. Blend the topping mixture until crumbly. Crumble over sweet potato mixture in dish. Bake at 350 F for 25 minutes or until brown on top.
