Cheesy Ham Casserole
1 8-oz. jar Processed cheese spread melted
3/4 c. milk
1 24-oz. pkg. frozen hash brown potatoes, thawed and drained (4 cups)
1 16-oz. pkg. frozen vegetable medley, thawed and drained
2 c. diced cured A-1 ham
1 large onion chopped, about 2 cups
pepper to taste
1 c. shredded cheddar cheese
1 c. buttered cracker crumbs
Preheat oven to dg350.
In large bowl combine melted cheese spread and milk. Add potatoes,
vegetables, ham and onions. Add pepper and mix well.
Spread mixture in 13- by 9-inch baking pan. Cover. Bake 45 minutes,
stirring occasionally. Uncover. Sprinkle cheese and cracker crumbs
over top. Bake an additional 5 minutes or until cheese melts and
cracker crumbs are golden.
Serves six.
