FROSTED LAYER COOKIES
CAKE INGREDIENTS (for cookie base) :
1/2 c. butter
1 c. sugar
2 eggs, beaten
1 tsp. vanilla
1/2 tsp. salt
1 1/2 c. flour
1 tsp. baking powder
FROSTING INGREDIENTS:
1 egg white
3/4 c. nutmeats
1 c. brown sugar
1/2 tsp. vanilla
Cookie base: Cream butter. Add sugar, eggs and vanilla. Mix dry
ingredients and salt to creamed mixture. Spread in greased shallow pan (12x8
inch) and cover with frosting mixture (below).
Frosting: Add brown sugar to stiffly beaten egg white, slowly beating
until creamy and thick. Add vanilla and spread mixture over cookie base in pan.
Sprinkle nutmeats over top. Bake in 325 degree oven for 30-40 minutes. Cool.
Then cut in small squares.
