Day Two                 Volume I Issue II

 

On The Second Day of Christmas Cookies. . .

I thought I'd bake for you. . .

 

 Kolcheys

 

4 cups flour

1 cup Crisco

3 egg yolks

1 egg white

pinch salt

1 large yeast dissolved in

1 cup evaporated milk unheated

powdered sugar for dusting - optional

 

Mix flour and Crisco, add eggs, salt, and liquid mix well. Refrigerate 6 hours 
or longer.

Roll out on a surface sprinkled with granulated sugar as you would  pie crust, 
roll thin. Cut into squares approximately 2½ inches or bigger if you desire.

Fill diagonally with your choice of filling - cheese, prune, poppyseed, 
mincemeat or nut filling. Fold the corners over the filling, pinch together (you

can dampen a corner with a bit of egg white or water to make it stick better)

 

Bake 350º until done.

 

You can dust with powder sugar if you desire

Ingredient Substitutions Tips 101

 

When I get ready to do my Holiday baking, I get out all my recipes, go through 
them and make a list of ingredients I will need. The last thing I want to

do is run to the store for something I forgot. But I live in the "real world" 
and I always forget something, or I decided to make something else instead

of what I planned. Over the years I have collected these hints and would like 
to share them with you. So if you find yourself in flour up to your elbows

and realize you don't have what you need, maybe there is something . . you can 
substitute.

Baking powder

1/4 teaspoon baking soda plus 1/2 teaspoon cream of tartar . . . .

substituted for 1 teaspoon baking powder

Cornstarch

2 Tablespoons all-purpose flour (for thickening) or 2 Tablespoons granular 
Tapioca . . . .

substituted for 1 Tablespoon cornstarch

Cake flour

1 cup minus 2 tablespoons all-purpose flour . . .

substituted for 1 cup cake flour

Self-rising flour

1 cup all-purpose flour plus 1 1/2 teaspoons baking powder and 1/2 teaspoon 
salt . . . .

substituted for 1 cup self-rising flour

Sugar

1 cup brown sugar packed . . . .

substituted for 1 cup sugar ~ flavor will change a little

Powdered Sugar

7/8 cup granulated sugar plus 1 Tablespoon cornstarch mixed on high in blender

substituted for 1 cup powdered sugar

Brown Sugar

1 cup granulated sugar plus 2 Tablespoons dark corn syrup or molasses . . . .

substituted for 1 cup brown sugar

Corn Syrup

1 1/4 cup light brown sugar plus 1/3 cup water

substituted for 1 cup corn syrup

Sour cream

1 cup plain yogurt. . . .

substituted for 1 cup sour cream

Buttermilk

1 Tablespoon lemon juice or vinegar plus enough milk to make 1 cup . . . .

substituted for 1 cup buttermilk

Butter

Unsalted butter can be substituted and you do not have to add additional salt 
to your recipe. Margarine can also be substituted in most recipes.

Not suggested to substitute lowfat margarine or light butter when baking.

Heavy Cream

2/3 cup milk and 1/3 cup butter. . . .

substituted for 1 cup heavy cream

Cocoa

1 square (ounce) unsweetened chocolate and decrease the fat in the recipe by 
1/2 Tablespoon . . . .

substituted for 1/4 cup cocoa

Unsweetened Chocolate

3 Tablespoons unsweetened cocoa powder plus 1 Tablespoon cooking oil or 
vegetable shortening

substituted for 1 square (1 ounce) unsweetened chocolate

Semi-sweet Chocolate

1 square (1 ounce) unsweetened chocolate plus 2 Tablespoons sugar . . . .

substituted for 2 ounces Semi-sweet chocolate

Vanilla Bean

1 teaspoon pure vanilla extract . . . .

substituted for 1 inch of vanilla bean

Allspice

1/2 teaspoon cinnamon plus 1/4 teaspoon each nutmeg and ground cloves

substituted for 1 teaspoon ground allspice

Pumpkin Pie Spice

1/2 teaspoon cinnamon plus 1/4 teaspoon nutmeg plus 1/8 teaspoon each allspice 
and cardamom - - - or

1/2 teaspoon cinnamon plus 1/8 teaspoon each ground ginger, ground nutmeg, 
ground mace, ground cloves . . . .

substituted for 1 teaspoon pumpkin pie spice

Holiday Tradition

 

Bird's Nest Ornament

 

Bird's nest ornaments are symbols of good luck. It is believed that the first 
ornament you place in your tree should be a birds nest. According to legend,

prosperity will come to any home that finds a bird's nest nestled among the 
branches of the family's Christmas tree. I have a bird's nest for all my larger

trees and to this day, it is the very first ornament I put in my trees.

This is a wonderful gift for someone having their very first Christmas away 
from home. Perfect for the newlyweds first Christmas together. It will create

a  memory every year they decorate their tree and remember . . . . . . . . .

 

Tomorrows Cookie. . . Chocolate Chip Bars. .

Buckeye (candies)

 

½ pound butter

(do not substitute margarine)

18 ounce jar peanut butter "crunchy"

1½ pound powdered sugar

 

Mix together well. Shape into balls ¾" to 1" in diameter and place on a baking 
sheet covered with waxpaper.

Chill for one hour

 

Melt 1/8 bar (or less) of paraffin wax with a 12 ounce bag of semi sweet 
chocolate chips over a double boiler.

Using a toothpick dip the ball about 2/3rds of the way into the chocolate. 
Leaving the top of the  peanut butter showing. Resembling a buckeye.

Remove the toothpick and repair the hole with the back of a spoon.

 

Store in refrigerator

note: The paraffin wax will keep the chocolate from melting on your fingers. 
You only need a small amount.

Vanilla Sugar

 

Cut 1 vanilla bean into 1" pieces. Add to 3 cups of white granulated sugar. 
Cover tightly and let sit for two weeks before using.

 

Put the vanilla sugar in a decorative glass jar that is airtight. Do not remove 
the beans. Tie a Holiday bow around the top. Add it to a gift basket with

cookies, cookie cutters, teas, or gourmet coffee. Just the perfect touch for 
someone special.
