CELERIAC CARROT SALAD IN MUSTARDY DRESSING

 

   1 cup coarsely shredded, peeled celery root

   2 to 3 carrots, peeled and coarsely shredded

   3 shallots, minced

   2 teaspoons capers, drained

   1 garlic clove, minced

   3 tablespoons mayonnaise, or 2 tablespoons mayonnaise mixed with 1 
tablespoon yogurt

   1 tablespoon dijon mustard

   1 tablespoon vegetable oil

   1 teaspoon white wine vinegar or fresh lemon juice

   Salt and pepper to taste

   1 tablespoon minced fresh parsley

 

   Combine the celery root, carrots, shallots, capers, and garlic, then moisten 
with the mayonnaise or mayonnaise mixture. Mix in the mustard, oil, and

vinegar or lemon juice, then season with salt and pepper. Chill until ready to 
serve. Serve sprinkled with parsley.
