Orange Poppyseed Quick Bread 
Servings: 16 slices 
2 cups whole wheat flour
1/2 cup sugar
1 teaspoon baking soda
1 tablespoon poppyseeds
1 cup orange juice
1 teaspoon vanilla extract 
Coat a loaf pan with nonstick cooking spray and preheat oven to 325
degrees. Combine dry ingredients and stir to mix well. Add the liquid
ingredients and stir just until dry ingredients are moistened. 
Pour the mixture evenly in the loaf pan and bake for 45 minutes (or
until a toothpick inserted in center of bread comes out clean). 
Let loaf pan sit for 10 minutes after removing from oven, then invert
loaf onto a wire rack and turn rightside up. Cool before slicing and
serving.
