Orange-Scented Chocolate Thins

  1                cup  butter flavor all-vegetable shortening

  1                cup  confectioners' sugar

  1           teaspoon  orange zest

  1           teaspoon  orange extract

  1           teaspoon  vanilla extract

  1 1/2           cups  all-purpose flour

     1/2           cup  unsweetened cocoa powder

  1           teaspoon  cardamon

     1/2      teaspoon  salt

     1/8      teaspoon  ground cinnamon

                        Chopped toasted hazelnuts -- optional

 

In a medium bowl, beat shortening and sugar at high speed with an electric 
mixer until light and fluffy, about 3 minutes.  Add zest and extracts, beating

well.

 

In a medium bowl, combine flour, cocoa, cardamon, salt, and cinnamon, sift.  
Gradually add flour mixture to shortening mixture, beating on low speed until

mixture is combined.  Shape dough into a 1 1/2 x 14-inch log.  Wrap in 
parchment paper.  Refrigerate for 2 hours.

 

Preheat oven to 350ยบ.  Line baking sheet with parchment paper.

 

Slice dough into 1/4-inch-thick cookies.  Roll edges in chopped toasted 
hazelnuts, if desired.  Bake for 12 to 15 minutes.  Cool on pan for 5 minutes. 

Remove from pans, and cool completely on wire racks.  Store in an airtight.
