APPLE SHORTBREAD CAKE   

      1 1/4 c. all-purpose flour
      1 tsp. sugar
      1 tsp. baking powder
      1/2 tsp. salt
      1/2 c. (1 stick) butter, cut into pieces at room temperature
      1 egg yolk
      2 tbsp. milk
      6 tart apples, peeled and thinly sliced
      Cinnamon topping (recipe follows)

      Preheat oven to 350 degrees. Butter 9-inch round cake pan. Sift first 5 
ingredients into large bowl. Add egg yolk and milk. Blend until smooth. Turn 
into pan, spreading evenly to edges. Arrange apples over top. Sprinkle with 
cinnamon topping. Bake until golden, about 45 minutes. Serve warm or chilled.

      CINNAMON TOPPING:

      3/4 c. sugar
      2 tbsp. butter
      1/2 tsp. flour
      1/2 tsp. cinnamon

      Blend all ingredients until crumbly.
