SWEET POTATO PECAN PUDDING
1 pound uncooked sweet potatoes, grated
1/2 cup honey, karo or maple syrup
3 eggs, well beaten
2 tablespoons butter, melted
2 cups milk
1 teaspoon cinnamon
1/2 teaspoon salt
1/2 teaspoon nutmeg
1/4 teaspoon ginger
1/2 cup golden raisins
1/2 cup pecans
Combine all ingredients together and pour into a buttered baking dish. Bake at 
325°F
for one hour stirring occasionally.
