Chunky Fruit & Nut Chocolate Bark
It*s fun and easy to make your own holiday candy. Packed in a pretty tin
lined with colored foil or acetate, this chunky bark makes a great gift.
Because it has no commercial stabilizers or gums, it needs to be kept
refrigerated to prevent melting.
Makes about 2 pounds 
1 1/2 pounds bittersweet chocolate, chopped
2/3 cup dried cherries
2/3 cup Earthbound Farm Organic Flame Raisins
2/3 cup salted cocktail peanuts
2/3 cup roasted cashews
Line a cookie sheet with foil and lightly oil.
Melt the chocolate in a double boiler or microwave until smooth.
Remove chocolate from the heat and stir in the dried fruit and nuts.
Spread evenly on the prepared cookie sheet and refrigerate until very
firm.
Break into pieces or cut with a knife if a more uniform candy is
desired.
To store, keep tightly wrapped in the refrigerator for several weeks.
