White Bean and Ham Soup 
2 cans (15 oz.) cannellini beans, rinsed and drained, divided 
1 can (14 oz.) reduced sodium beef broth 
2 TB olive oil 
1/2 medium onion, chopped 
1 tsp. ground cumin 
1/2 tsp. salt 
1/4 tsp. ground black pepper 
8 oz. cooked ham, diced 
6 cups chopped red Swiss chard 
In blender or food processor, puree 1 can of the beans and broth until
almost smooth. Heat oil in large saucepan over medium heat until hot. 
Add onion; cook 3 minutes or until tender, stirring occasionally. Add
cumin, salt and pepper; cook and stir 1 minute. 
Stir in remaining 1 can beans, bean-broth mixture and ham. Bring to a
boil; cover. Simmer 5 minutes or until heated through. Stir in chard.
Cook 1 minute or just until wilted. 
Yield: 4 servings
