Quick Biscuit Mix
submitted by Naomi
Hi, I have a biscuit suggestion for you that will cut preparation time
quite a bit, and it is MUCH more cost effective than buying the packaged
variety.  Make your own biscuit mix!  Then, all you have to do at
dinner time is add the wet ingredients, mix, roll, cut, and bake!
This biscuit mix makes 12 cups, or 4 batches of biscuits.

Ingredients:
9 c. flour
1/3 c. baking powder
1/4 c. sugar
3 tsp. salt
1 tsp. cream of tartar
2 c. butter-flavored shortening
Directions:
Combine first five ingredients in a bowl, then cut in shortening until
mixture resembles coarse crumbs.  Store mix in an airtight container,
in a cool, dry place for up to 6 months.  To make a batch of 10
biscuits, use 3 c. baking mix and add 2/3 c. milk, stirring just until
moistened.  Knead dough for 10-15 strokes, then roll out and cut into
2 1/2-inch circles.  Place biscuits on an ungreased baking sheet and
bake at 425 degrees for 12-14 minutes, or until golden.
I love this recipe - it is so quick and easy!  For a fun twist, try
adding 1 tsp of Italian seasoning to the mix before you add the milk.
