CIDER SALAD
   3 ounces apple gelatin
   1 cup hot water
   1 cup apple cider
   3 tablespoons lemon juice
   2 cortland apples
   1/3 cup minced celery
   1/3 cup diced almonds
   1 1/2 cups creamed cottage cheese
Cider dressing:
   1/3 cup mayonnaise
   2 tablespoons apple cider
   1 1/2 teaspoons lemon juice
   Dissolve
 gelatin in hot water; add cider and lemon juice. Chill until slightly 
thickened.
Core apples; peel one apple and dice. Cut unpeeled apple in small wedges; place 
in
an 8-inch mold. Reserve enough wedges for garnish. Fold diced apple, celery and 
almonds
into gelatin; pour into mold. Chill until firm. Unmold on salad greens; fill 
center
with cottage cheese. Garnish with remaining apple wedges. Serve plain or with 
cider
dressing.
    Cider dressing:
   Combine all ingredients; serve over cider salad.
