Beef Spanish Rice
1 cup white rice
1/4 cup butter or  margarine
1 medium onion, sliced thin
1/2  medium green pepper, diced
2 cups stewed tomatoes with  juice
1 teaspoon salt
dash of pepper
1 cup water
1 pound lean ground beef,  browned

Melt margarine in large pan. Add  onion, green pepper and rice. Cook and stir 
over high heat until mixture is  lightly browned. Add browned ground beef. 
Mix well. Add tomatoes, water, salt  and pepper. Mix well. Bring to boil. Lower 
heat, cover and simmer 30 minutes.  
Serves 4-6
