Hanukkah Shortbread Cookies 2 sticks unsalted butter 1 cup confectioners sugar 2 cups all-purpose flour, sifted 1/8 tsp. salt 1 Tbsp. vanilla about 2 cups blue sanding sugar Using an electric mixer beat butter and sugar. Stop mixer and scrape bowl. Resume beating until smooth the add salt and vanilla. Add flour quickly, mixing until just incorporated. Let dough rest in refrigerator for one hour. Preheat oven to 350 degrees. On a lightly floured surface roll out cookie dough until �-inch thick. Dip cookie cutters into flour and cut various shapes out of dough, using Hanukkah-themed cookie cutters. Place parchment paper on cookie tray and place cookies on top of paper.
