Raisin Nut Bread

INGREDIENTS:
3 cups sifted regular flour
1/2 cup sugar
1 1/2 teaspoons salt
1 1/2 teaspoons baking powder
3/4 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 egg
1 cup milk
2/3 cup molasses
1/4 cup melted shortening, cooled
1 cup raisins
1/2 cup finely chopped walnuts

PREPARATION:
Into a large bowl, sift together sugar, salt. baking powder, soda, cinnamon
and nutmeg.

Beat egg slightly in a small bowl; stir in milk, molasses, and melted
shortening; add to flour mixture all at once.
Stir just until blended. Stir in raisins and walnuts. Pour into a
well-greased 9x5x3-inch loaf pan. Bake at 350° for 1 hour, or until a wooden
pick inserted
in center of loaf comes out clean.

Cool raisin nut bread in pan on a wire rack 10 minutes. Loosen around edges
with a knife; turn out onto rack and cool completely. Wrap in plastic wrap
or
foil and store overnight for easiest slicing.
