Pineapple Glazed Carrots.
7 pounds carrots peeled & cut into 1/4" slices
2 & 1/2 cups unsweetened pineapple chunks drained & juice reserved
3 tablespoons unsalted butter
3 tablespoons lemon juice
1 teaspoon salt
3 tablespoons cornstarch
Place carrots in steamer basket over boiling water
cover saucepan & steam 7 minutes.
Drain & return to saucepan
combine pineapple, butter, lemon juice & salt.
Add to carrots
stir & simmer over low heat until mixture is heated throughout.
Mix cornstarch with 1 cup reserved pineapple juice
& add juice to carrots.
Stir constantly until mixture thickens.
