Cinnamon Swirl Yogurt French Toast

FRENCH TOAST:
2 medium eggs
4 egg whites
1 cup skim milk
1/2 teaspoon cinnamon
8 cinnamon swirl bread slices
TOPPING:
1 16 ounce carton plain nonfat yogurt
5 tablespoons maple syrup
2 cups coarsely chopped fresh fruit

For toast: Combine eggs, egg whites, milk, and
cinnamon in medium bowl; mix well. Preheat a nonstick
skillet over medium heat; lightly coat skillet with
cooking spray. Dip each slice of bread into egg
mixture and coat thoroughly; place in skillet. Cook
about 2 minutes on each side, or until set and lightly
browned.
For topping: Combine yogurt and maple syrup in small
bowl.
To serve: Cut warm French toast on the diagonal.
Arrange 2 slices (4 halves) on each serving plate; top
with 1/4 of the fruit and 1/4 of the yogurt mixture.
Serve immediately
