Dilled Rice with Walnuts and Raisins
3 cups water
1/2 teaspoon salt
1 1/2 cups long-grain rice
1/2 cup walnuts
1/2 cup fresh dill leaves
1/2 cup golden raisins
1 teaspoon finely grated fresh lemon zest
2 tablespoons white-wine vinegar
1 tablespoon olive oil
In a saucepan with a tight-fitting lid bring water to a boil with salt.
Stir in rice and cook, covered, over low heat 20 minutes, or until water
is absorbed and rice is tender. 
While rice is cooking, lightly toast walnuts and chop coarse. Chop dill. 
Fluff rice with a fork and stir in walnuts, dill, raisins, zest,
vinegar, oil, and salt and pepper to taste. 
Serves 4.
