Grandma's Lemon Pie
Ingredients:
1/4 cup       cornstarch
1-1/2 cups   cold water
1 cup     sugar
3            egg yolks, slightly beaten  (Reserve
whites for meringue)
zest      of one lemon, grated
1/4 cup       lemon juice
1 tbsp.   butter or margarine
Directions:
       Heat oven to 350º F. (175º C).  In saucepan,
combine sugar and cornstarch.  Gradually stir in water until
smooth.  Add egg yolks.  Bring to a boil, stirring constantly. 
Boil 1 minute.  Remove from heat and add lemon zest, juice and
butter.  Pour into baked 9" pie shell.  Beat egg whites, gradually
adding 1/3 cup sugar.  Beat to stiff peaks.  Cover surface of pie,
sealing meringue to crust.  Bake 15 - 20 minutes.
