Hash Brown Crusted Quiche 3 cups frozen shredded hash browns, thawed and drained 1/2 stick butter, melted 3 large eggs, beaten 1 cup milk or Half-And-Half 1 cup diced cooked ham 1/2 cup diced green onion 1 cup shredded Cheddar cheese salt and pepper to taste
Press the drained hash browns between layers of paper towels to get out as much moisture as you can. In a 9 inch pie plate toss the hash browns with the melted butter into the plate. Press them into the bottom and up the sides of the pan to make a crust. Bake at 400 degrees for 25 minutes. Mix the eggs and the Half-And-Half or milk in a cup. Near the end of the baking time combine the remaining ingredients for the filling and season with salt and pepper to taste. When the crust is ready, remove it from the oven and spoon the meat, cheese and vegetable mixture over the the hash brown crust and pour the egg mixture over the top. Return to the oven. Lower the oven temperature to 350 degrees. Bake at 350 degrees for 30 to 40 minutes.
