BERNARD'S FRESH APPLE CAKE
   2 eggs, beaten
   1-1/4-cups oil
   1-teaspoon vanilla
   3-cups fresh, chopped apples
   3-cups flour
   1-1/2-teaspoons soda
   1/2-teaspoon salt
   2-cups sugar
   2-teaspoons cinnamon
   1-teaspoon nutmeg
   1-cup chopped pecans
   In
 mixer blend eggs, oil & vanilla. Add apples. Add sugar, flour, soda, salt, 
cinnamon
& nutmeg. Mix well. Add chopped nuts. Pour into greased & floured bundt or tube 
pan.
Bake at 350 degrees for 1-hour to 1-hour 15 minutes or until done. This cake may
be baked in 3 small, long pans. Freezes well.
