Carrot Cake

2 c. flour
2 tsp baking soda
1 tsp salt
4 eggs
2 c. sugar
2 tsp cinnamon
3 c. grated carrots
1-1/4 c. vegetable oil
Optional: raisins and/or finely chopped walnuts

Stir all dry ingredients with oil.  Add eggs, one at a time.  Add

carrots.  Add optional items.  Bake at dg350 for one hour or until cake

tests done.

Icing:
8-oz. cream cheese
5 tbsp unsalted butter
3 c. powdered sugar
1 tsp vanilla
1 tsp ginger

Mix all ingredients and ice cooled cake.
