Coconut Brownies
 
1 cup butter, softened
2 cups sugar
4 eggs
1 tsp vanilla
1 1/2 cups flour
1/2 cup plus 2 tbsp baking cocoa
1/2 cup flaked coconut
 
In a large bowl, cream the butter and sugar until light and  fluffy.  Add 
the eggs, one at a time.  Beat well after each  addition.  Beat in the 
vanilla.  Combine the flour and  cocoa.  Gradually beat into the creamed 
mixture 
just until  blended.  Stir in the coconut.  Spread into a greased 13 x 9  
inch baking pan.  Bake at 350 F for 22-25 minutes or until a  toothpick 
inserted near the center comes out moist crumbs.  Do Not  Overbake.  Cool on a 
wire 
rack.  Makes 1 1/2 dozen
