Cajun Cake
 
CAKE
1-1/2 CUPS SUGAR
1 1/2 tsp BAKING SODA
2 C. FLOUR
2 EGGS [beaten ]
1 tsp/Vanilla 
1 LARGE CAN [crushed ] PINEAPPLE with the  juice

CAKE TOPPING
1 stick margarine
small can evaporated milk 
1 cup sugar
1 cup coconut 
1 cup [chopped pecans ] 
1 tsp/vanilla


DIRECTIONS
mix together all the cake ingredients,
pour into a greased/floured 13'' by 9'' cake pan,
bake 300 degrees 30 to 40 min. remove from oven cool, and punch holes all  
the cake w/a fork.
boil the margarine, milk , 1 Cup sugar
for about 5 min. Remove from heat and add coconut, pecans & vanilla ,  pour 
over the cake.
