Crock pot Cajun Chicken

1 whole chicken (about 3 to 4  pounds, cut into 8 pieces (or use whatever 
pieces your family likes. Works well  with 4 boneless, skinless chicken 
breasts as well)
2 red onions, sliced
2  green or red bell peppers, sliced
4 cloves of garlic, minced
3 stalks  celery, chopped
3 Tbsp. roux 
1 can (8oz) tomato sauce
1 can (10-2/3oz)  chicken broth
1 can (6oz) tomato paste
2 Tbsp Cajun seasonings  
1 tsp. Tabasco or use what you like
1 tsp. black pepper  
hot cooked rice or noodles

Put onions, garlic, peppers, celery and  then the chicken in Crock pot. Put 
all liquid and spices in a blender and blend.  Add the liquid to the Crock 
pot, making sure to cover chicken. Cover and  cook on LOW setting about 6 to 
8 hours. Serve over hot rice or noodles.  

If using boneless, skinless chicken breasts it may only take 4 to 6  hours. 
Check after about 3-1/2 hours to see how quickly the breasts are  cooking.
