Simplest Loaf Cake 1-1/2 c. all-purpose flour 2 tsp baking powder 1/4 tsp salt 3 large eggs 1 c. sugar 1/2 c. sour cream 2 tsp pure vanilla extract 1/2 c. flavorless oil (canola)
Preheat oven to dg350. Generously butter an 8-1/2 by 4-1/2-inch loaf pan. In bowl whisk together flour, baking powder and salt. Whisk eggs, sugar, sour cream and vanilla together until well blended. Add dry ingredients and stir until smooth. Pour in oil. Use whisk to gently but thoroughly fold it into batter. Pour batter into loaf pan and bake 50-55 minutes or until a toothpick inserted into the center of the cake comes out clean. Cool on a rack 5 minutes, then unmold and cool to room temperature.
