Black-Eyed Peas
 
3 cups dried black-eyed peas
1 medium yellow onion, diced
1 small ham hock
1-1/2 quarts water
Salt and pepper, to taste
 
Pick over the peas, discarding any  pebbles or debris. Place peas in a pot
And add enough water to cover by 2  inches. Allow to soak overnight.
 
Drain peas, return to pot, and add the  onion, ham hock and 1-1/2 quarts
Water, I add a can of rotel tomatoes  to mine,, heck I use rotel in almost 
everything, lol. Bring to a boil, and then  reduce heat to a simmer. Cover 
and cook,
Stirring occasionally, until peas are  very tender, an hour or more. Kept
Over a very low flame, flavor continues  to develop for up to 4 hours or so.
Season to taste with salt and pepper, and  serve. Janet
