Bayou Chicken Bake

4 to 6 Perdue  individually frozen boneless, skinless chicken breast
1 1/2 to 2 t. Cajun or  Creole seasoning
1/2 c. chopped onion
1 c. uncooked regular long grain  rice
1 pkg. (16 oz.) frozen black eyed peas
2 cans (14 1/2 oz. ea.) Cajun  style stewed tomatoes
2 T. chopped fresh parsley

Preheat oven to 350°.  Lightly grease 13x9" baking dish.
Sprinkle chicken with Cajun seasoning;  place in baking
dish. In lg. bowl, combine onion, rice, black eyed  peas
and tomatoes. Pour over chicken. Cover and bake 45 min.
longer, or  until chicken is cooked through. Sprinkle with
parsley before serving. Makes  4 to 6 servings.
