Here's another one from the White House Family Cookbook:

Fried Apples

4 large, tart, green cooking apples
4 tbsp light brown sugar
1 tsp cinnamon
4 tbsp butter

Quarter apples; removing stem and core.  Cut each quarter into
1/8-inch thick slices.

Sprinkle apple slices with cinnamon and sugar; mix to coat well.

Melt butter in nonstick skillet.  Saute apples 7 to 8 minutes, or
until tender and lightly browned.  Serve immediately.

Yield 6 servings.
