I read the Yellow Farmhouse Cookbook a few years ago. Good book. I've gotten several recipes from it.

Hi Folks,

You may recall, I've been reading "The White House Family Cookbook."

Well, below is the last of the recipes which I took from that source.

I am looking through the Yellow Farmhouse Cookbook" now.  I'll share
anything I come across.

President Reagan's Whole Wheat Muffins

1 c. whole wheat flour
1 c. all-purpose flour
4 tsp baking powder
1/2 tsp salt
3/4 c. light brown sugar
3/4 c. coarsely chopped walnuts
3/4 c. seedless raisins
1 c. milk
2 eggs, beaten
2/3 c. melted vegetable shortening

Preheat oven to dg425.

Grease 18-muffin tin cups and dust with flour, or use paper muffin cup liners.

Sift together flour, baking powder and salt.

In large bowl combine dry ingredients with brown sugar, nuts and raisins.

Combine milk and beaten eggs in small bowl. Mix in shortening and blend well.

Stir milk mixture into dry ingredients and combine until just moist.
(Do not overmix.)

Divide batter evenly among muffin cups--filling each a little more
than half full.  Bake 15 to 20 minutes until evenly browned and tests
done.

Cool on wire racks 5 minutes before removing muffins from tins.

Yield 18 muffins.
