Hummingbird Cake

1 plain  yellow cake mix
8 oz can crushed pineapple, in juice, undrained
2 medium  or 3 small bananas, over ripe is best, mashed
1/2 cup water
1/2 cup  vegetable oil
3 large eggs
1 tsp vanilla extract
1 tsp ground  cinnamon

Combine cake mix and all other ingredients. Beat one minute to  blend, 
scrape sides of bowl, and mix another 2 minutes. (When I make this cake,  I put 
the eggs, pineapple with its juice, into the mixer bowl, and then cut the  
bananas into small chunks and add. I then run the mixer for a minute or two, 
and  it mashes the banana. then add the cake mix, oil, water and 
flavorings.) Pour  the batter into two well greased and floured 9 inch cake 
pans. Bake 
at 350 for  30 to 32 minutes, or until springs back when touched lightly in 
the center. Cool  a few minutes, and remove from pans. When cake i s cooled, 
fill and frost with  -

Cream Cheese Frosting

8 oz Each butter and cream cheese, at room  temperature
3 1/2 to 4 cups confectioners sugar
1 tsp vanilla

Beat  this together until smooth. When cake is frosted, sprinkle top with 
1/2 cup  chopped toasted pecans.
