Charlene's CANDIED YAMS

 

6 medium yams

1/2 cup King Syrup

1/2 cup brown sugar, firmly packed

1/4 cup butter

2 Tablespoons water

 

Scrub yams and cook in water until tender, but NOT mushy.  Drain

and cool.  Remove skins and cut yams into halves.  Put brown

sugar, King Syrup, butter and water into saucepan.  Bring to a

rolling boil.

Dip each yam half in the boiled mixture and place them in a

buttered baking dish.  Pour remaining liquid over potatoes.  Bake

in 350° F. oven for 30 minutes, turning yam pieces two or three

times during baking.  Serves 10 to 12.
