CHICKEN WITH CUCUMBERS

 

1 Fryer Chicken ( cut into serving pieces)

2 TBSP Cooking oil

1/4 pound fresh Mushroom slices

2 cloves Garlic (minced)

3 TBSP Flour

1 3/4 cups Water

1 bouillon cube (used in water)

2 large Cucumbers (see directions)

1 cup sour Cream

 

In a large skillet over medium heat, brown chicken in oil. Remove

chicken and reserve. To the pan and drippings, add mushrooms and

garlic, Sauté for 2 minutes. Gradually add flour to coat

mushrooms. Then start to add water/bullion mixture gradually.

Cook until bubbly. Reduce heat add chicken and cover.

Simmer for 30 minutes. Stir occasionally

Meanwhile, slice 1 cucumber into thin slices; set aside. Peel

remaining cucumber; slice lengthwise and scoop seeds out of each

half with a spoon. Cut into 1 inch chunks. Add to skillet and

simmer for 20 minutes more.

Stir sour cream into sauce and bring to heat, but not to a boil!

Garnish serving plate with cucumber slices and serve.
