Pumpkin Spice Cookies

2 c. all-purpose flour
1-1/3 c. quick or old-fashioned oats
1 tsp baking soda
1 tsp ground cinnamon
1/2 tsp salt
1 c. butter, softened
1 c. packed brown sugar
1 c. granulated sugar
1 c. solid-pack pumpkin
1 egg
1 tsp vanilla extract
1 c. chopped walnuts
3/4 c. raisins

Combine flour, oats, baking soda, cinnamon and salt in medium bowl.

Beat butter and sugars in large bowl until light and fluffy.  Beat in

pumpkin, egg and vanilla.  Gradually beat in flour mixture.  Stir in

walnuts and raisins.  Drop dough by rounded tablespoon onto baking

sheet coated with cooking spray.  Bake in preheated dg350 oven for 12

to 14 minutes, or until lightly browned.  Let stand for 2 minutes.

Remove to wire racks to cool completely.

Yield 4-1/2 dozen.
