Miss Quinn's Peanut Butter Cookies
1 cup sugar
1 cup light brown sugar
2 eggs
1 cup plus one tablespoon of Crisco shortening
1 cup peanut butter
2 cups flour plus one tablespoon more
2 teaspoons soda
1 teaspoon salt
1 teaspoon vanilla
Cream both sugars, eggs and shortening, vanilla and salt.
Next, add peanut butter, flour and soda. Mix well.
Form into patties and lightly press them down with a fork dipped in flour to
make a design on top. I prefer dipping the fork into granulated sugar for this
effect.
Bake at 375 degrees F. for 10-15 minutes.
They took about 9 minutes in my gas stove. Watch carefully!
