The problem is.. the codec. :)
 
Nellymoser format is undocumented and AFAIK there is no open source decoder or docs. I heard from the flashcomm list that Adobe will be releasing an tool to transcode to mp3 on labs but so far its not materialised. When / if its released perhaps you could use this with red5, although I would imagine it they might block commercial use in the licence.
 
Anyway, we decided quite early on that we will not get involved in transcoding codecs since there may be legal issues. We will however try to make red5 easy to extend should by users who might want to plug it into vendor sdks or external apps such as ffmpeg.

Another thing that you can't do with FCS or FMS2 is to record an audio conference.
