I doubt it's the support for Flash Player Beta that breaks connecting from Mac clients. A better candidate is the new handshake verification code that checks the handshake reply received from the client against what Red5 sent to him - maybe Macs change something in this reply... I'll prepare a short test so you can add a bit more debug output to your server to see what happens.
