Can you say a little bit more of how you're trying to do this? There are
several steps to streaming from custom durectories:

Do you have your own app, or are you using oflaDemo or the like?
In either case, it would be preferable to define your own FilenameGenerator.
To do this, you can follow Joachim's guide. The basic idea is to create a
FilenameGenerator that inherits from IStreamFilenameGenerator. You fill out
the public methods to return a relative filename (relative to the webapp
directory). A good start is to copy the code given in
DefaultFilenameGenerator and tweak.
I created my custom filename generator inside my webapp, andassociated it
with this webapp through the xml config files, like so:

Red5-web.xml inside webapps/nielsApp/WEB-INF:

        <bean id="streamFilenameGenerator"
            class="org.red5.server.webapp.nielsApp.NielsFilenameGenerator"
            />

This should be enough to use this class to generate file paths.

If you want truly custom paths (e.g. you want to stream from some other
shared disk or a completely different location) you will need the latest SVN
version of Red5 that includes code to support this. Joachim's guide doesn't
cover that as of now, but for the current stable releases, it should be
fine.
