To further comment I was looking to do the same thing myself previously. The only thing I could do towards that end with the page defitions was to preassign containers with certain content classes that contained default values. I could then use render tags to pull the values into various parts of the page. Can't really say it was a good way to go and in the end came up with complete different solution that do not use page defitions (which really seem to kind of be useless because of this limitation, otherwise they would be awesome). Been mostly happy ever since.
